DIM stands for 3,3'-diindolylmethane, which consists of a methane group with two indole groups attached to it. The main natural source of DIM is the digestion of cruciferous vegetables. During digestion, glucobrassicin breaks down into indole-3-carbinol and thiocyanate, catalyzed by the enzyme myrosinase, which is also present in cruciferous vegetables. Water also reduces the availability of DIM, since glucobrassicin is water soluble. Low-temperature steaming is therefore the best method for cooking vegetables while maintaining the bioavailability of glucobrassicin.

Heat breaks down myrosinase, so cooking vegetables reduces the bioavailability of DIM. However, some of its bioavailability is still preserved because the human intestines also contain a certain amount of myrosinase.
